Was going to recommend Chessmaster 9000 since it just came out for OS X. hrm..
You'll have to balance out ease of use with cost.

If you want something that you can just double click and has lots of eye candy,
might be worth $30-40 (?) for Chessmaster.

Eboard and Xboard both work find under Mac OS X, though they require X11 and
aren't as nice looking. Also I dont believe they offer any kind of tutorials or
options for "learning".
