Hi.
There are three ways to come to engines parameters.

1. With the engine loaded and engine window visible:
   Rightclick in the pv-field and select engine option (first selection).

2. With the engine loaded and engine window hidden. (normal play)
   Select Extras/option (shortcut=F12) in the menu and click on engine option.

3. With the keyboard shortcut <ctrl>+t.

If you want to use the new settings for f.ex. an engine match you need to
'create engine' while you have the engineoption dialog visible.
