So, only because for commercial reasons since the Shredder 8 UCI engine is sold
in a different package, but made for the Shredder UCI gui it is not tested.

Well, realistically speaking the difference from Shredder 7 is that at 49.99
Euro one was buying both guis and now to have the same one needs to pay 49.99
Euro + 29 Euro for the Classic Interface to complete the package.
Note that both versions are SMP. To have the same SMP version one needs to buy
Deep Fritz 8 at 99.99 Euro.

Before one could have Shredder 7 CB and Shredder 7 UCI and it could be a choice
to select which one to test.

The funny thing about this is that the 2003 World Champion is not tested by the
SSDF as the version used for the tournaments is the UCI one!

So, SSDF "lost" the possibility to have it tested...as you said a similar
product is leading the SSDF list...
