Basically, you count up all the attackers and defenders of a particular square, and then look at what would happen if you made each capture, one at a time, starting with the least valuable piece, and going through the most valuable. You also have to bear in mind when you can stand pat (not make any more captures). Sjeng's SEE code is an excellent model.
