Dear Andrew,
step forward to XML is IMHO a good idea!
In your example I don't understand, why you still use quotes (") in the
elements, I expect the XML data without quotes:

You can create a schema definition for the XML data, to make clear, what type of
data is expected with each element. Also I'm not sure, whether it is a good idea
to have all game move data in one <Moves> element. Wouldn't it be more XML like
to have extra (sub-) elements for variations, comments and annotation glyphs ?
