The default compiler is gcc indeed.
That makes life so much easier and nicer and gdb is the debug back end.

vi is available by default on OS X.

;-) yep. It is all there (here) working quite nicely.

I actually use qmake (from QT, trolltech).
It is flexible and easy for my needs.
