For Crafty, you can ask by simply starting a game and then typing "display pawn" to see the piece/square table for a pawn. Note that this changes after castling and when the endgame is reached. You can also look at evaluate.h to see all the evaluation scoring terms, but beware of thinking this is "solved". I change them regularly when I see something bad happening...
