I've tried to link most Mac chess software information on the Web here.

The freely downloadable Mac chess software is gathered at:

Sigma Chess 4.02 Lite is a good place to start - runs on pretty much any
Mac, lots of nice features, decent strength.

There is a downloadable demo linked at the first URL above, but
as far as the commercial version, the only place Virtual Chess Mac
seems to currently be on sale is in France.
The U.S. office claims it will be selling in the U.S. by
March 1, but I'll believe that when I see it.

Of the chess-playing programs on the Mac, Chessmaster 4000 is probably
the most tailored to that. It has many tutorials.

Chess Mentor is the best thing for that. It's a bit pokey on that Mac
at the moment, but other than that, it's really aimed at helping you
to improve. There's a downloadable Mac demo, too.
