I've been wondering the same thing. I think the winboard GUI seems the least buggy and best suited for tournaments (other than the obvious lack of UCI support without a converter). Can anyone confirm whether converters like Polyglot hurt the performance of the engine significantly? It would be interesting to start a game out of the opening book with all three of the major GUIs. I have all three GUIs on my computer and I would be willing to test a bit. BTW, is thinker 4.7a a UCI engine? If not, how is it running in chessbase?
