This depends on the speed of your machine. For these engines, (and I'm assuming you're not talking about Deep Shredder 9 on a dual box), I'd recommend 64mb for blitz if you have a modern processor (>2GHz AMD, >2.8GHz Intel), 32MB if not. Slow games will depend on how slow you mean. For 60min games, you may want to double that. Always keep hash sizes in powers of 2 (16,32,64,128,256,etc.) It's best to simply experiment, really.
