Do you want to also play against people and other hardware?
If so get a FICS account freechess.org and get winboard/xboard.

xboard -zp -fcp crafty.exe -size small -ics -icshost freechess.org

voila!

If you just want to play against other engines on your own computer. You can do
the same just w/o ics.

xboard -fcp crafty -scp sjeng.exe -mg 100 -sgf 100-sjeng-crafty-game.pgn -size
small

That's just an example, and would have crafty and sjeng play 100 games and log
them to a pgn file. Winboard/xboard have a lot of options so you can tweak it to
your liking.
