Fruit and Crafty are indeed typical choices for engine sources to look at
nowadays.  Gerbil and TSCP were typical choices five years ago.  I don't see
any reason to recommend looking at them today.  There are plenty of more
recent engines which are clearly stronger without being more difficult to
read and understand.  Diablo, Natwarlal, OliThink, Scorpio and SlowChess are
obvious examples.
