Hello George,
Pro Deo comes with an opening book made by Jeroen Noomen, it is pretty good. If
you do not specify another opening book in Chessbase, Pro Deo will use that. I'm
not very familiar with Chessbase, I don't have it even, so maybe somebody else
can help if I'm quite mistaken..
The settings for hash you can set with instructions from the Pro Deo readme.txt.
But Pro Deo can also make changes in the amount of hash it uses, I have not seen
it do that myself. But look for the W parameter in WB2UCI.ENG file.
From the Pro Deo 1.1 readme.txt:

. You can increase (or decrease) the Hash Table size by editing the
WB2UCI.ENG file. Modify the "w7" item of the parameter:
Program = prodeo.exe w7 rebel.eng

w1=512Kb | w2= 4Mb | w3= 12Mb | w4= 24Mb | w5=40Mb
w6= 60Mb | w7=100Mb | w8=200Mb | w9=400Mb
Save the file and restart the program. The change is permanent.
. You can turn off Rebel's opening book by removing the ";" character
from the parameter: ; InitString = BookOff/n
