ChessBase can immediatly create a temporary tree (which is like a Fritz book)
from a selection, or search result, of games. You can do this with Fritz too,
when you create a database from the search result for your starting position,
and then create an opening book from that database. It does not immediatly
present a set of positions which most often arise from your variant, but by the
numbers of games the moves are based upon (which are visible in the tree/book
display) you could easily figure it out.

The opening report function of ChessBase may also produce something similar to
that what you want. It tries to determine the critical positions in the
continuations for a given variant, or position. It recommends variants based on
the games and results in the database where it occured.
