Sometimes even better players do not play their first 6 moves by memory I know even about a case when a player with rating near 1800 bet with friends that he is going to beat an opponent with rating near 1600 with 1.a4 and 2.h4 and won the bet. It is easy to get 1600 players out of book early by better strategy(for example 1.c3 or 1.e4 a6(Even karpov lost a game against 1...a6 so it certainly can work against 1600 players). Players who are afraid from the common lines can choose irregular lines and it is a problem only at the high level and certainly not at the level of 1600. Uri
