I unfortunately don't use Chessbase, however several ppl here do so hopefully
someone else can fill in the spaces. As for modifying you could get the
largn.pgn from Dr. Hyatt's website and use that for generating the opening book.
Most of my experience is with engine level book creation.

As for editing the book, I use scid. Rather I use scid for selecting/editing the
pgn databases to select certain games. Then use the resulting pgn for importing
into whatever engine I'm making a book for.
