I do. For chess I like Jin (Java !) or Blitzin interfaces. Jose (Java)
is also quite nice though a bit buggy.
Other programs in Linux that look good are Firefox, Opera where you can browse
in tabs, K3b (CD burning tool), Adobe Reader 7.0 and openoffice.

You mention Gimp as a program that uses multiple windows. As of Gimp 2.0
the user interfaces has been improved and the number of windows has been
reduced.

Yes Java is Ok as long as it's coded properly. The Jin interface is fast and
responsive, Shredder for Linux GUI is not.
