I got an answer from Matthias Feist. It's not a problem with UCI but with
chessprogram8.exe with the dialogue box for engine parameters. It is not related
to Fruit and will be fixed in the next update.

So far you can change the parameters if you create a new UCI-Engine with the
desired parameters. You should however never close the parameters-box wiht OK.
