You can use the following work-around:

Create a new UCI-Engine and change the parameter as you like. Give it a new name
like Fruit 2.2 (Uri) in order to create it. Now if you load the engine the
settings should be correct. You can check this by looking on the Properties but
make sure you close that Window with "cancel" otherwise your setting is
destroyed.
