Fruit probe the tablebases and not the fritz9 interface. The Fritz9 interface has no way to tell fruit not to use tablebases. If you want fruit not to use tablebase you simply need to change the tablebase path so fruit cannot find them. tools->option->tablebases is the way in fritz8 I am not sure about the way in fritz9 interface because I have not that interface.
