Subject: Centipawn Evaluations....

Every Engine will evaluate a position differently.
Games are not won or lost based on centipawn evaluations..
There are good moves and bad moves.
Simply go to Toolbar
Window
Panes
and from Menu select:
Explain all moves

Do it from the starting position
You will see that the Program evaluates every legal move in every position
on the board. That is the Root Position.
It evaluates every legal move on the board every time a move is made.
This becomes the new Root Position and the Search & Evaluation begins again.
Also, the Hash Tables are cleared.

What is the success of Fruit for example?
IMO Fruit does not use EGtb's so it searches faster.
It uses minimum hash which also speeds up the engine search.
It is not a race between the Hare and the Tortoise..
The fastest does win the race.
Playing games with engines Fruit is not encumbered by large Hash Tables
You don't need them!
Better to set your Engine to Default Settings, Drop your Hash to 1 MG
See if you don't have better results.
