MCP has a correspondence mode but you can't select the moves. Nimzo3/3.5 had/has a correspondence mode too which was very fine with move selection and exclusion. A shame it was taken out with Nimzo98 and Nimzo99. Rebel has some kind of what you need, move selection and exclusion, limited to 6 moves of your choice. I am not sure about Shredder, don't have it here at hand.
