Humans evaluate positions also, they just use their vastly superior pattern recognition methods upon a protein substrate rather than the more brute-force methods on a silicon subtrate the computers use. The game of chess is a very limited domain - it's defined within an 8X8 board and a small number of rules. Humans may do a lot of things currently that computers cannot, but I don't grasp how "play chess" is one of them. You're right - I don't "get it". Please enlighten me - define "play chess".
