I agree with Jon Dart (Arena is better for contests anyway).

But if you insist on using polyglot (e.g. if you want to play online you will
need to do this anyway) here is my sample polyglot file for fruit:

E:\programme\winboard\polyglot>type fruit.ini

[PolyGlot]

EngineName    = Fruit
EngineDir     = E:\programme\winboard\fruit
EngineCommand = fruit

Log     = false
LogFile = fruit.log

Book = true
