I think that fabien did not plan to start with open source and continue with
closed source.

He simply did not expect fruit to be so strong relative to the commercial
programs and he understood that it is bad to continue with open source program
because some clones may win an important competition.

I also see nothing dishonest with deciding to close the source of fruit.
