You could try making the moves "main move" (color green)
The moves you don't want it to play therefore should not be green (rightclick on
the move and check/uncheck "don't play in tournament")
Then set the book setting to 'optimize'.
Now it will only play 'tournament moves'. The green ones.

(In theory of course, we're talking chessbase here..)

PS. make sure the book is not write protected.
