The simple answer to your question is: No, you cannot make Fritz do this for you. On the other hand, such an option could be implemented, though in order to do it consistently, the programmer would probably have to allow the program to treat chess as a game of imperfect knowledge, where you can't know the exact value of a piece, a square or positional compensations. Instead of exact evaluation values, one woud have ranges; the variations would use the top of the range for alfa-beta, but in addition to this, one would have a range of possible lesser values representing the degree of risk involved. The user could then set a level of risk that the program would accept, or allow the program to auto-adjust to it's opponents play using basic game theory.
