For something minimalistic, but good, it is hard to beat XBoard/Winboard.
Perhaps it doesn't look as nice as the alternatives, but I think it is still
faster, more reliable and less buggy than anything else.  If you write
a few little scripts for running it, it can do almost anything you want.
It is probably less newbie-friendly than Arena and the ChessBase
GUIs, though.
