Probably HIARCS, mainly because it and Rebel Decade are the only
one's I've used there.

Well, that depends on what I'm doing. I have over a dozen Mac chess-playing
programs. The three I use most are:
- HIARCS Mac
- because it is by far the strongest Mac chess program
- because it will display three variations in "monitor mode"
- because it will display its opening book
- because I can copy the PV to the clipboard with "Text Capture"
- Mac Chess 5.01
- because I can copy/paste EPD/PGN to/from it
- because it launches very quickly
- because it displays it's PV nicely
- because I can easily copy the PV from it
- Sigma Chess 4.02 Lite
- because it is really good at finding all the mates in a position
- because the interface is gorgeous

Only chess program I played came with the system - not very memorable.
