Simple: the maximum hash size that you can squeeze out of your machine. :)

If you suppose that Fritz will predict your moves 50% of the time and thus can
use its PB in these cases, the average time per move is
 A = [own reflection time] + .5*[opponent's reflection time]

In your setup, you will have A= 3.5 minutes, compared to A=4.5 minutes in 40/2
matches.
So Fritz will perform at 78% of its 40/2 performance, or roughly 30 ELO weaker.
