On a quad (like my xeon) Intel uses 4-way interleaving to read 32 bytes in one cycle. 4 processors don't starve for memory since this interleaving makes memory appear to be 4 times faster. Most duals don't do this, and memory becomes a bottleneck. Even with two cpus, it is not uncommon to see applications run only 1.5 times faster because of the memory bandwidth (or lack thereof).
