I'm at the eastern fringe here, and as far as I'm concerned you can safely push
this one or two hours later. In fact 7 pm (or worse, 6 pm) may be too early for
me. I guess the Americans will appreciate the delay, and this can even give the
down-unders a decent morning hour.

Don't generalize on the American way of life: I know American restaurants
usually close at 10 pm. That's closer to their opening time in Europe and around
here.
