Mark,
the only way is to use Shootout (under TOOLS/Analysis). This option though only
allows for plies and not time controls.  There are several messages if you
scroll down talking about setting up Engine vs Engine with time controls, but
even with the new patch, you cannot get the new Fritz 6 to play the new Fritz 6
(unless you copy and rename the engine--as is also mentioned below).
