Crafty is my favorite open source chess program

Golem is my favorite punching bag

Shredder is my favorite professional engine, with Chess Tiger a close second.

If I want to analyze an esoteric position, I will throw Shredder, Ruffian, List,
Phalanx and Quark at it.  Phalanx and Quark sometimes have novel ideas.

The prettiest code I have seen is Tao's.

Actually, I like them all for different reasons.  I would not want to part with
a single one of them.
