Judit Polgar studies 6 hours a day. I agree that they prepare a lot. But there
are hundreds of GMs in the world. Even if you spent a day studying each one, by
the end of the year, you would have forgotten what you thought you had
discovered a year earlier on a specific GM. Yes, they study a lot. But I think
that their study is more involved with openings, variations, combinations, and
endgame studies, and only occassionally with the openings of a different GM (and
then only when they know they will be playing him or her). The next time I talk
to a GM, I will ask.
