Why not just give the man an answer - the mode you are looking for is CH-BY1.
You can set the time anywhere between 1 second and 9 minutes 59 seconds. The
CH-BY2 mode allows for times under 10 hours. Basically, if you move within the
specified time, the clock resets to the specified time. The Chronos manual gives
the appropriate example - if you set the BY time to 10 seconds, and a player
moves with 2 seconds remaining, he will have 10 seconds for his nect move. The
more formal name is for this mode is Chess Byo-Yomi, Mode 1 or Mode 2. One last
mention. There is a first time control before the Byo-Yomi time starts, but if
you set that to zero, you will only play the Byo-Yomi time, which is, as I
understand it, what you want to do.

As for my happiness with the clock - I am very happy with it.
